New Ways to Cook Veggies

Hi SCDers,

Fall weather is starting to arrive & it’s getting me in the mood for some cozy fall meals. While I keep an eye out for some new recipes, I wanted to share some ideas of different ways to cook your veggies from Paleo Pan. We typically buy the same veggies at the store and cook them the same way, but always remember to change both of those things up. Try beets, or swiss chard, or something new. Try roasting veggies with a new oil (avocado, walnut, etc.) or toss in cranberries or nuts to create variety.

Roasted Beets with Balsamic Glaze (Use honey instead of maple syrup)

Asparagus with Mushrooms and Hazelnuts

Butternut Squash with Cranberries

Butternut Squash with Garlic and Thyme

Cashew Broccoli with Lemon (Use olive oil instead of ghee)

Mediterranean Vegetable Cakes

Sautéed Kale with Pine Nuts

***Inspiration Tips***

  1. Start looking for Thanksgiving recipes NOW to prevent any last minute undue stress. Try typing in keywords such as Paleo or SCD recipe into google alongside a traditional favorite and you’re bound to find a handful of recipes to choose from. There is also a “Holiday Recipe” section under the Recipe Database.
  2. Try to make a new recipe at least once a week this month. Whether it’s breakfast, a snack, lunch, dinner, or dessert, randomly pick something from the database or look for something tasty on Pinterest. It’s worth the small investment in time to incorporate new recipes into your week to create variety/prevent burnout and you may just find a new staple recipe!
  3. As you find recipes or products you’re going to try, please post it on the Open Forum page under Resources on this website or our Facebook group to generate more conversation on these pages & to utilize other SCDers in your area as a support system and a VALUABLE resource!
