Curry Indian Spice Chicken

Saute 7-8 chicken breasts, cubed, in olive oil.  Remove cooked chicken.  Add 1-2 chopped onion, garlic, 1T (or more) curry spice, 1 tsp (or more) garam masala spice to oil and saute.
Then add 1 cup of chicken stock, 1 can coconut milk, 1/2 cup plain yogurt (not Dr. D legal but SCD legal), and cooked chicken. Cook until fluids are reduced a bit.
You can leave out the yogurt; it gives it a tanginess.
Spices Used:
2-3T fish sauce
1 jalapeno
2-3 T honey
Onion, garlic….yes
Small bushel of cilantro at the end of cooking process….I like it to keep a little color
Lemon rind of one lemon….Plus the juice to give it more pop
Basil…about 1/4 cup chopped
Lemongrass
The last 3 ingredients…nutmeg, coriander, tumeric, cumin….is also in the garam masala.  It’s up to the cook to add more to suit their own tastes
