Mashed Cauliflower “Potatoes”

Serves 4-6

Ingredients:

  • 1 head cauliflower
  • 1/4-1/2 cup scd shortening
  • 1/2 tsp. salt, to taste
  • 1/4 white pepper, to taste

Instructions:

Preheat the oven to 350F if you would like more of a “baked” mashed potatoes dish.

Cut  the cauliflower and steam it until tender. (About 10-15 minutes)

Place the cooked cauliflower in a food processor and blend until smooth with the butter. Add salt and white pepper to taste.

If you’d like more of a baked taste, place in the oven for about 15 minutes.
