Thai Peanut Sauce with Ginger

This is a mild Thai peanut sauce recipe, perfect for kids who love peanut butter. If you prefer a spicier version, you can add extra red pepper flakes or even fresh diced chilies. Serve your Thai peanut sauce over veggie noodles, or use as a dip for veggies. You can also use this sauce as a salad dressing if you add some extra liquid to thin it out a bit. This Thai peanut sauce with ginger recipe is even vegan!

 

Ingredients

1/3 C peanut butter, softened

3 tbsp water (hot water not from tap best)

Juice from 2 limes

1 tbsp fresh minced ginger

1/2 tsp honey

1 clove garlic, minced

1/4 tsp red pepper flakes, or to taste

salt to taste

 

Directions

Whisk together all ingredients in a small bowl. If needed, you can microwave the peanut butter for a few seconds first to soften it up.
